What a blast freezer does
A blast freezer uses high-velocity cold air to pull product temperature down quickly. The aim is to spend less time in quality-risk zones and form finer ice crystals, which helps protect texture after thawing.
When to separate it from a storage freezer
- Production cycles that must freeze within a set time
- Warm incoming loads that need fast pull-down
- Quality-critical duties such as seafood export or ice cream
A storage freezer holds already-frozen goods. Blast duty is a process step — do not combine both roles without separate load calculations.

- Product type, batch weight and starting temperature
- Target freeze time and end temperature
- Rack or trolley layout with clear airflow paths
- How product moves into the storage freezer after each cycle
